I've heard it said time and time again (mostly on Epic) that there is no one right way to ski. While that's debatable, I can tell from my own experience that is certainly a lot of wrong ways to ski, judging by the results. On the same token, I've heard it said that there are no bad skis anymore, everyone makes good skis these days. From my experiences demoing skis lately, I'm amazed at how many bad skis there still are out there. Either that, or skis with very bad tunes, but that's another story. I'm equally amazed by the number of people that rave about some of the skis that I thought were really terrible. That would seem to re enforce the importance of demoing. But I've had the same experience that HighAngles mentioned, I've demoed a ski one day and loved it, and demoed the same ski another day and hated it. So I guess it's just a case of doing the research and the leg work to come up with ski that's right for you.
